When that DM slides in asking for noods you've got to deliver. Cashew based for another dairy free option when you're craving Mac and Cheese. Took @keeks.kitchen advice and boiled my soaked cashews to make my sauce even creamier. Results. Delicious. πŸ₯° * 1 1/2 cups soaked raw cashews 2 cups non-dairy milk 1/3 cup nutritional yeast 1 red pepper chopped 1 tsp ground mustard 1/2 tsp onion powder 2 tsp paprika 1 tsp turmeric 4 cloves garlic chopped 1 tsp salt * Soak cashews overnight. Drain, rise, boil in water for 10 min. Drain. Add all ingredients to a blender and puree until smooth. Add more liquid as needed. One of my 2019 goals was to really focus on how my food choices are impacting my health. Food has been always been a struggle in my life and I have tried to find ways to enjoy the comforts of food and nostalgic eatungu without demonizing my desires to enjoy meals and memories. It's hard. πŸ₯ž * Weekends give me more time in the morning to cook and one of my favorite weekend meals is pancakes. Carbs! I know. However, loading two pancakes up with fruit and protein is one way that I've found to enjoy this comfort food without filling up the wheat based carbs and sugars. The natural sweetness of bananas and other fruit helps me to satisfy my sweet tooth. Topping with other goodies like baked coconut flakes gives a richness of flavor to make the meal even more satisfying. πŸ₯ž * So, enjoy your food. Savor it. Relish the memories. In moderation any food is diet food. For Valentine's Day I give you bagels! Not the traditional gift, but one that is very near and dear to my heart. Something so satisfying about a good bagel. Nostalgic. Like a stroll on the boardwalk. Hitting up your favorite bakery for that warm, fresh Sunday treat. mMmmmm. Yum. πŸ₯° * I promise to post a recipe soon on my blog. But, for now, here's a secret to getting that delicious crust at home. 😘 * After shaping your bagels drop them into boiling water for 1 min per side before baking them. Add 1 Tbl of baking soda and 1 Tbl of molasses to your water. The baking soda will give your bagel that dark chewy crust and the molasses adds a hint of flavor and a shine. Bakeries often use egg white glaze but if you're vegan you can sub in aquafaba! My food is made of simple ingredients and most fall into that #cleaneating category. Why? Because of my health. I feel better physically eating this way, and it's my contribution towards a healthier planet. Is it hard to eat a plant based diet and be active? Not at all. I am a vegan athlete. I'm an aspiring cyclist who enjoys the open road and challenging my body. With that, I do need to be aware of what I'm eating to ensure a balanced diet that is giving my body what it needs. 🌱 * I maintain a balanced diet by tracking my macros using @loseitapp. LoseIt is how I lost 175 pounds, and it's how I'm maintaining a healthy active lifestyle now. I like seeing my little pie chart and my weekly totals. When I'm a little sluggish I look back at my week and I can see that my protein was down or my fats weren't from the best sources. I had given up on myself for a long time. Then, finally it hit me. I needed to change. For me it was the birth of my son. He was the motivation I needed to take control of my life. Seeing pictures of myself holding him I wasn't proud. I was ashamed. I was nearly 400 pounds and felt uncomfortable in my own body. On a day that I should have been so excited, I tried to hide from pictures. I want my son to be proud of me, and the way I felt sitting in that hospital room I wasn't proud of myself. πŸ˜• * In two years I lost over 175 pounds. I started tracking my food with @loseitapp, and I gained control over my eating habits. I went from consuming nearly 5k calories a day to eating balanced meals that are focused on healthy choices. It took a lot of will power, and I struggled to make changes. But I did it. I still struggle with food addiction, but being the active dad I dreamed of is what keeps me on track. I'm proof that it's possible.
