Plan Ahead

If you’re planning on losing weight but you’re not planning your food you’ll miss your goal. Meal prep is essential for weight loss because if you wait to cook until you’re tired and stressed chances are you’ll default to the foods that got you to your current weight. Fast food is loaded with sugar and sodium. That’s why it’s so good! Making your own meals allows you to use fresh products and control the ingredients.

One trick that I’ve learned is to prepare the raw ingredients and freeze them so that you have materials ready to go for a quick meal. Fajitas, soups, veggie mixes, fruits, are all easy to pull out of the freezer and throw together for a healthy meal. If making compete meals takes up too much freezer space or is too daunting start with just the ingredients.

Here’s my favorite fajita recipe. For a quick meal freeze the chopped veggies ahead. I generally have two or three bags of this ready to go for a healthy and quick meal.

  • 3-4 peppers (green, red, yellow)
  • 1 jalapeno diced (could skip this)
  • 1 large onion
  • 2 cloves of garlic minced
  • 2-3 tbl fresh cilantro minced
  • In another baggie – Spice mix: 2 tsp paprika, 1 tbl cumin, 2 tsp chili powder, 1/2 tsp salt, 1 tsp oregano, 2-3 tsp corn starch (the corn starch will soak up the liquid)

When you are ready to cook use 1 tsp oil in a large saute pan and cook until veggies are softened and water is at a minimum (about 5 minutes) You don’t need to thaw the veggies before cooking. Add in the spice mix and cook for 1-2 minutes.

For a protein feel free to get creative and use what you like eating: black beans, tofu, seitan, chicken, etc. Think lean and filling!
