Nice cream is a good alternative to your ice cream craving. It’s easy to make. You get a full serving of fruit in a bowl. There are endless combinations to try. Plus, there’s no fat and no added sugars. It really is “nice.” If cholesterol is problem, nice cream doesn’t add any to your diet. You can satisfy your sweet tooth without adding a new belt hole.
You’ll need a food processor to make nice cream, and you’ll need to plan in advance by having chopped or sliced bananas in the freezer. The riper the banana, the sweeter the flavor. Under ripe bananas, ones with green on them, will be too bitter. I like to have several bags of prepared bananas in the freezer just in case I feel the urge come on.
3 chopped and frozen bananas
1/4 cup unsweetened cocoa powder
2 tbl maple syrup or honey (honey isn’t vegan though)
1/8 tsp kosher salt
2 tbl to 4 tbl liquid (almond milk is good)
1/2 cup chocolate chips divided
Put all ingredients, except chocolate chips, into food processor. Puree until desired consistency. *Add liquid slowly so that you don’t end up with soup. Add chips last and save some for the topping.
Serve with toppings of your choosing. My picture and calorie count includes 4 tbl of peanut butter.
Makes 4 servings.
*You can skip the cocoa powder and stick to just fruits like strawberries or blueberries. You don’t need the maple syrup but I like mine to be a little sweeter.
*To make a mocha flavor add a tsp of instant espresso to the liquid before adding it. You could make a mint chip nice cream by adding a splash of mint extract to the recipe above.
*If you don’t have frozen bananas don’t fear! Instead of the liquid throw in some ice cubes. It won’t be as thick as ice cream, but it’ll be like a thick smoothie and still tasty.
